Fior di Pascolo
Fior di Pascolo is an artisan cheese produced by Caseificio Dancelli. Fresh milk from Austrian pastures is collected each day and transported to Lombardy. The name comes from the words fiore and pascolo which means pasture flower.
Aged for approximately one month, Fior is reminiscent of an Emmental, with a sweet and delicate semi-firm paste. Its rind is inedible, forming a tough, ridged crust that darkens with age. The cheese is just as unique inside - during the ripening process, holes the sizes of a cherry or even walnuts are formed, making it a visually striking and delicious addition to your cheese board.
