Comte Reserve Arnaud Aged 18 Months

Comté has been made in small village-based cooperative dairies, or “Fruitière,” for over eight centuries. This process has created a sense of solidarity and pride and has preserved the traditions and the small-scale production techniques that have helped ensure Comté continues to be one of France's most popular and protected cheeses.

At the heart of the Haut Jura is the Charles Arnaud cellar at the iconic Fort des Rousses that accommodates over 100,000 rounds of Comté cheese in exceptional maturing conditions. A well-aged Comté, like our 18-month Comté Arnaud, is produced in the spring of the previous year and will display a sumptuous golden-yellow straw colour. The texture of aged Comté is firm and smooth, with a dense, fudgy bite. The flavour reflects milk that is typical to the Jura flore - sweet, floral, with a distinct brown butter and toasted nut taste. You will also notice the paste is flecked with tyrosine crystals, sometimes referred to as cheese diamonds! These crystals are formed from strands of amino acids during the aging process, and add a toothsome quality to an already addictive, delicious cheese.
