Comte St. Antoine AOP Aged 10-15 months
In the heart of the Jura mountains, Fromagerie Marcel Petite has been dedicated to maturing Comté cheeses of exceptional taste for more than five generations. French cheesemonger Marcel Petite first conceived of his philosophy in the 1960’s during an era that favoured over-manipulation of agricultural practices. He engaged the company in organic farming and allowed nature, place and season to guide their refining process.
Specializing in the slow, cool maturation of Comté, Marcel Petite coaxes out the complexity and nuance from the ripening wheels in their special cellars. One is located in the defunct Fort St. Antoine in the forest of Haut-Doubs, at 3600 feet altitude; the other is in Granges Narboz, the brick and wood cellars of the village bearing the same name. When selecting a wheel, the Marcel Petite Cellar Master considers four key criteria: delicacy, subtlety, intensity and depth of flavour. The ripening age is an indicator, but not the main criterion of selection.
This young Comté comes to us from the cellars of Fort St. Antoine and is aged between ten to fifteen months. With a supple, buttery texture that melts in the mouth, upfront notes of peanuts and fruit are followed by an intensely bright and delicate finish.
