Amazing Grey

Located in St. Mary's, Ontario, Stonetown Artisan cheese was founded in 2015 by Hans and Jolanda Weber who immigrated to Ontario in the mid-nineties. Together with master cheesemaker Ramon Eberle, Stonetown produces more than half a dozen award-winning farmstead cheeses that are reminiscent of the alpine greats.

Made using unpasteurized goat's milk, this handcrafted cheese is aged for more than twenty-four months, developing an inedible rind and sweet aroma. Flecked with crystals, the paste has a smooth, granular mouthfeel and nutty, caramelized flavours.

Taking home Grand Champion at the British Empire Cheese competition in 2021, this aged cheese is perfect for those averse to more farmy goat offerings - think of it as a goats milk Gruyere. On your board, this cheese pairs well with white wines and pale lagers and would also be excellent grated into soups or melted in a grilled cheese sandwich!
