From top-quality milk sourced from local herds to the savoir-faire of its artisan cheesemakers, Laiterie Charlevoix are renowned for their finesse.

Established in 1948, this fourth-generation family business began as a dairy farm selling its products in the Charlevoix region and on Québec’s North Shore. The seven Labbé brothers, grand-children of the dairy’s founding fathers, now run the business which aside from its traditional Cheddars, also produce and distribute fine cheese Canada-wide.

A typical Quebecoise-style semi-firm, Le 1608 is made using thermized milk from the heritage breed of vache Canadienne. Unique to Canada, this breed of cows arrived with the first French colonists.

Matured for three to six months, each hefty eight-kilogram wheel of 1608 develops a lightly pink rind with a springy, golden paste with flavours that are creamy, nutty and slightly farmy. Great as a table cheese, 1608 is also an excellent melter - making it the ultimate choice for a very Canadian fondue and raclette!
